Lemon Curd Parfaits


I'm loving my Lemon Curd. I really encourage you to make some. But even if you don't make some yourself, go out and buy some. You'll find so many uses for it. So many simple things, like this dessert.

This is what my girls made for Mother's Day for dessert.


I would have loved it no matter what because it was made with love, but it was truly wonderful, light, just the right amount of lemon, and I love Vanilla Wafers.

And I don't think it took them 10 minutes to put it together.

Lemon Curd Parfaits

1 jar (8 ounces) Lemon Curd
1 container (8 ounces) Cool Whip
1 cup crushed Vanilla Wafers
2 tablespoons melted butter
extra Vanilla Wafers for garnish



Combine crushed cookies with melted butter and set aside.

In a medium bowl, fold Lemon Curd into Cool Whip till blended.

Now just layer in serving dishes. Crumbs, Cool Whip crumbs, cool whip, a little more crumb on top.

Add a cookie for garnish and serve.

I don't have pictures of the process because I wasn't involved in the making, just the eating!
