Who doesn't love peanut butter and chocolate, right?
Dinners, Dishes and Desserts posted this recipe the other day and I knew I would be making it.
And it's a muffin, that makes it healthy doesn't it?
Ok, I might be pushing it, but Peanut butter does have protein in it, so there!
Peanut Butter Chocolate Chip Muffins

(and we just followed Erin's directions on this one)
2 cups all purpose flour
1 1/2 teaspoons salt
1 tablespoon baking powder
1 cup milk
2 large eggs
2/3 cup sugar
1 cup peanut butter
1/3 cup vegetable oil
1 cup chocolate chips
Heat oven to 375 degrees. Spray muffin pan with non stick spray.
Stir together flour, salt, baking powder and chocolate chips in a large bowl. Combine milk, eggs, sugar, peanut butter and oil in a separate bowl; combine ingredients until just moistened. Do not over beat.
Fill 18 muffin tins. Top with a few chocolate chips. Bake for 14 minutes.
I have to tell you Cassie and I were disappointed in these.....at first.
They are not sweet like a cupcake.
Duh, as hubby pointed out,
these are MUFFINS!
So we went back for another try....
And remembering that these are muffins, they are YUMMY! Hubby stuck one in the microwave with some butter on top....melted bliss.
And I noticed this morning, a few more were missing....breakfast on the run for the kids, I guess.
