Pineapple Casserole



We love pineapple in my house, fresh, canned, in cake, anyway we can get it.

But our absolute favorite is in this casserole.

And it so easy.

And with the holidays coming up, it goes perfect with ham.



In fact we look for reasons to have ham or pork just so we can have this casserole.

And I'd never even heard of this until a cousin brought it to a pot luck about 15 years ago.

And I had to have the recipe.

And now you can have it too.

Pine Apple Casserole

2 cans (20 ounces) pineapple, crushed or chunk, we like the chunk
5 Tablespoons flour
1 cup sugar
1 stack (sleeve) ritz crackers
1 stick butter or margarine, melted
1 1/2 cup shredded cheddar cheese

This is also kid friendly. Especially if you let them have the juice from the pineapple!


Drain your pineapple and set juice aside for ham or child, I split it between the two.

Place crackers in plastic bag and hand to child to crush.


Once crushed, add melted butter to bag


combine, then add all your cheese



and let your child combine again


Now place your drained pineapple directly into your casserole dish. The recipe says to lightly grease the casserole dish and mix in a separate bowl but I'm all about less dishes and it doesn't make a difference in the end, so pineapple directly into dish.


now add your sugar and flour (you can reduce the sugar by half but we like it all)


now stir with a spoon to combine well


it will look dry but stir until a wonderful syrup forms


Smooth out pineapple as best you can


and have your child place the cracker topping all over the top


use it all


Now bake in a preheated 350 degree oven for about 30 minutes, until golden brown on the top


This recipe can also be halved and made in a loaf pan.

    @mjskit, we eat it as a side dish but could also be a dessert. I've had the leftovers as a snack with ice cream and it's even better that way!

    @Carolina, anytime I can have my kids in the kitchen I try to, at least I know when they are grown and gone, they won't starve!
