
A few weeks ago my friend Ann of The Fountain Avenue Kitchen posted about making Dulce de Leche in your crock pot. I'd seen all the posts a few years back about putting an unopened can of sweetened condensed milk in a pot of water on the stove to make it. That way always seemed a bit unsafe and if you can't see it, how do you know when it's done? So of course, I never tried it.
With Ann's recipe, you make it in the crock pot, in a mason jar. You can cook it for as long as you want to get the desired thickness and color you're going for. Ann's my latest hero. I mean, common, just look at this stuff!

So now I've got all this Dulce de Leche, I had to make it twice, just for testing purposes. What to do with it?
Then my friend Stephanie wants to have a party! Online of course, but hey, I'll take a party any way I can get it. Stephanie's made a few changes over at her blog Back for Seconds. First off, she's now a .com! She's also been redesigning her site, making it all pretty and easy to navigate. I have to tell you, I loved her site before she did the redecorating. Her photos make you drool and she's got some amazing recipes like 3 Ingredient Mocha Fudge Sauce, Celebration Oreos, Ice Cream Scoop Cookies, and her Good for You Cookie Dough Dip.
So it's a party, I've got Dulce de Leche that if I don't do something with it, I'll just eat it all with a spoon. Parfaits are perfect for a party. Make them ahead, easy to serve, completely portable and yummy! Not too heavy like a large cake or pie. Have you ever noticed at a party or a potluck, people just won't cut a slice of something? If it's already sliced, they'll dig in but picking up the knife and cutting it, nope, they'll just move onto the cookies or something already served up.
This is so versitile, feel free to change up the cookie, for a completely different flavor experience. I made then this time with Ginger Snaps and with Oreos. Both were wonderful, the kids went for the Oreo, the adults went for the Ginger Snap, I went for both.
Dulce de Leche Parfaits
1 can Dulce de Leche or one homemade jar
1 8 ounce tub of cool whip
1 cup crushed cookies
1 tablespoon butter, melted
Combine crushed cookies and melted butter, just enough to moisten cookies, set aside. Fold Dulce de Leche into cool whip. Now just layer crushed cookies, cool whip mixture, cookies, cool whip and save just a few cookie crumbs to sprinkle on top. Store in refrigerator until ready to serve.

ReplyDeleteI love how you don't have to spend hours preparing the desert. Put it in the crockpot and wait until it's done. Mixing with the Coolwhip and putting them together is the fun part. I'm all for that! Plus they look so pretty.
ReplyDeleteI've made dulce de leche in the can. It works, but I kept a careful eye on it the whole time. Love this simple little recipe using dulce de leche. I ended up eating what I made by the spoonfuls, as its sooo good.

ReplyDeleteDulce de leche is one of my favorite sauces - I generally eat the thing straight out of the jar with a spoon. I've never used it to make a parfait, though. What a great idea!

ReplyDeleteWOW! I've boiled the cans of scm for years, but never ever thought about putting it into a jar...in the crockpot of all things...to watch it turn brown. Brilliant! I could eat the whole jar myself too. This is a terrific way to enjoy that caramel-y goodness.
